January

Well, it's been almost a month since I updated anything. I guess January is kinda blah, so lets see if I can think of anything exciting to share.

*JT had a great parent/teacher conference
*I've reconnected with some great friends of Facebook
*My dad seems to be doing better (He had a mild stroke on Thanksgiving day)
*My car has heat
*My dryer is fixed
*The best thing so far...I was baptized at church yesterday!

Since there's not a lot to say, I'm going to post a recipe that I have made a couple of times, and it's a HUGE hit. Enjoy.

Apple Enchiladas
6-8 Apples, peeled and cut into chunks
1/2 c. Cinnamon & Sugar Mixture
Mix these together in a glass bowl and cover with plastic wrap. Cook in Microwave for 7 minutes on high. Let them cool.

12-14 (8 inch) flour tortillas

1 c. brown sugar
1 c. white sugar
1 c. water
1 c. butter

Grease 9x13 baking dish. Spoon about 1 heaping quarter cup of cooked apples evenly down the center of each tortilla. Roll up tucking in edges and place seam side down in prepared dish. Over meadium heat, combine white sugar, brown sugar, butter and water. Bring to a boil stirring constantly. Reduce heat and simmer 3 minutes. Pour sauce over enchiladas and let sit for 30 minutes. Bake in 350 degree preheated oven for 20 mintues or until golden brown.

Santa was Good

Santa was good at our house this year. At least that's what JT said. Of course today he's already telling me what he wants for his birthday. (His birthday is in March!). Here's some pics from Christmas morning. Let me explain this first pic. About 15 or so years ago, when I lived with my Aunt and Uncle, there once appeared this odd picture of Jesus. We call him "JP." That stands for "Jesus Picture." JP would end up in all sorts of odd places. In bed, in the shower, in the car, pretty much anywhere funny where you wouldn't expect JP, he was there. One time I was visiting my sister in Phoenix. There was a gift for me there...it was JP. Somehow it traveled from Colorado to Phoenix and it was waiting for me. 5 years ago, when we moved, I left JP at their house (since He was given to us as a wedding gift the year before). Low and behold, a gift arrived in the mail last week...and what else could it be...but JP!! Thanks Kak...Look for him sometime soon.

My Angel

A few weeks ago we had around 5 inches of snow. As I shoveled the driveway, JT made his way thru the neighborhood leaving his mark. He decided he would put a snow angel in everyone's yard. Two days after it snowed, it got freakishly warm (if that's even a word), and at 10 p.m. I looked out into the front yard and this is what I saw.

Pretty cool if you ask me.

Holiday Fun

Ok, my mint fudge turned out FANTASTIC. Thanks to my mom for helping me out. She's the best.

Tonight I'm having my Bible Study ladies over for dinner. I made a new soup recipe. Have you ever heard of Pizza Soup? I found the recipe online and made it. I hope it's good. Joel tried it and he said it was good. He's not a soup eater, so if he liked it, then it's probably good. I also made some homemade garlic croutons to go along with the soup. Other's are bringing salad, bread sticks and dessert.

I have my table all set with my nice flatware, my Christmas dishes that my grandma gave me, and our champagne glasses. I'm going to serve a fun little non-alcoholic drink. I just think we need a little fanciness in our lives sometimes.

I Love Christmas

I just love Christmas time. Today I have baked 6 dozen delicious sugar cookies. JT and I will decorate them another time. This weekend I made a big batch of Chex Party Mix. I'm still going to make some mint fudge and MORE peppernuts. Tis the season...

Holiday Baking

The past few years I have really had fun doing some holiday baking. I'm making some favorite things that my mom has made, along with some new favorites.

Tonight I made peppernut dough. If you don't know what peppernuts are, they are tiny little dime size cookies. They have spices and anise oil in them. I don't know if this batch will turn out. It just didn't seem right. I hope it does.

Another one of my absolute favorites is homemade party mix. It's so much better than that stuff you buy in a bag at the store! I don't know why we only make it at Christmas time.

Last year a friend gave me a recipe for fudge, and it is the BEST fudge I have ever tasted. Here is the recipe!

Holiday Fudge
4 1/2 c. sugar
1 can evaporated milk
3 pkg. chocolate chips
1/2 lb. margarine
15 oz. marshmallow creme
1 t. vanilla
1 c. nuts (optional)
Cook sugar & milk to soft ball stage. Pour over other ingredients and mix. Pour into buttered pan. Makes 5 lbs.
